Guilt and a Rustic Blueberry Peach Tart

Kim Severson, one of my favorite food writers, recently published a book, Spoon FedThere is a hilarious chapter in which Severson describes cleansing her kitchen before a visit by the famed Alice Waters.  She tosses cans of soda in the trash and frets over frozen (albeit organic) chicken nuggets. Heaven forbid Ms. Waters catch a glimpse of processed food!

crostadaSometimes I feel like Severson.  I am cringing now as I admit that I used a store-bought pie crust for this rustic blueberry peach tart.  And while I’m airing the dirty laundry, I might as well let you know that I often use store-bought pie crust.  I know how to make pie crust, and from-scratch really does taste better, but sometimes convenience is key.  I had this tart in the oven in 10 minutes flat.  You can’t beat that!

So, then, why do I feel guilty?  I have drilled into my own head the superiority of everything homemade, but what’s wrong with convenience every now and then?  It’s not as though my grandmother, my culinary idol, never used a canned biscuit or boxed cake mix.  As a child she spent summers in her mother’s kitchen putting up fruits and vegetables for winter – out of necessity not nostalgia.  So as an adult she adored store-bought canned peaches and jarred tomato sauce. For her generation, convenience foods were a symbol of freedom and sophistication – not commercialism.  Instant rice and condensed soup allowed my grandmother time out of the kitchen, out of the house.

And refrigerated pie crust allowed me to produce a beautiful dessert in minutes.  Sweet, juicy berries and bright, fresh peaches make this simple dessert a sure crowd-pleaser.  Ideal after a  BBQ, the flavors of this rustic tart are pure summer.  And since almost any combination of fruits could work in a tart like this, if you keep pie crust on hand, it’s easy to throw together an impressive dessert in no time. I happen to like this rustic tart served with a scoop of honey ice cream, but it’s lovely all on its own too.


Rustic Blueberry Peach Tart

Serves 8

1 refrigerated pie crust

3 large peaches, thinly sliced

1/2 cup blueberry jam

1/2 teaspoon cinnamon

1 cup fresh blueberries

2 tablespoons cream

3 tablespoons turbinado sugar

Preheat the oven to 375 degrees. Roll out the crust on a greased baking sheet.  Arrange the peaches in a concentric circle on the crust, starting about 2 inches in from the edge. Mix the jam and the cinnamon.  Spread the jam on the dough in the open center, in the middle of the peaches.  Mound the berries on the jam.  Fold the edges of the dough in over the peaches, pinching as you go to secure the crust. Brush the dough with the cream.  Sprinkle the entire tart with the sugar.  Bake for 40 minutes, or until the crust is slightly brown and the berries are bubbling.  Cool slightly before slicing.

  1. Beautiful Tart! Don’t worry…Poppin’ Fresh has been my baking partner for many years! I’m trying to learn how to make a good crust, but even when I do I won’t guarantee that in a pinch I won’t use the little puffy guy’s wares. Everything in moderation, right? I love the peach/blueberry combination you’ve used.So delicious!

  2. What a beautiful dessert! I always feel guilty too when I take short cuts, but the way I look at it, we’re doing a lot more than most people so it’s ok to cheat every now again especially if the flavor isn’t effected!

  3. That looks delicious. i made crepes with peaches and cream cheese whipped cream, and pralined almonds last night for a dessert, but it took forever to make. This would be equally delicious, and much less prep time 🙂 Next time I need a dessert, I’m going to give this a try for sure.

  8. I think that many of us feel as you do. The truth is that I have been making my own pie crusts only because, I can’t make a decent one and I am working on overcoming that.

    • Thanks! I love that little plate too… it was part of the everyday set my in-laws used when they were newlyweds in the 70s!

  11. Kristy…it’s your kitchen…own it and don’t be afraid to be authentic about somewhat weaker moments. A bit of help in the kitchen just makes you appreciate the fully homemade meals and desserts that much more!
    I’ve been there a few times…cake mixes for one in a pinch with great homemade custard and fruits etc.

    No one person is perfect…a pretty lipstick once and a while just perks me up…a little help from my manufactured friend ;o)

  14. I couldn’t make a home made pie crust to save my life. I have to buy store bought, I’m ashamed to say. This looks wonderful. Perfect way to use all the fresh fruit available right now.

  17. I just made a peach and blueberry galette a few weeks ago (looks very much like this rustic tart) and I was so sad when I went to the farmer’s market on Saturday and there were no blueberries. Oh how summer is getting away from me so fast.

    • I know! My parents have blueberry bushes and all of the berries are gone – so sad summer is almost over!

  22. Guilt shmuilt – I can make a crust too but if it’s a good one, why not buy? It’s a great convenience food to have on hand – if I buy puff sometimes I make palmiers too.

  30. Don’t feel guilty! Sometimes we feel like making something from scratch, and sometimes we just want a quick dessert. Everything in moderation. I think food snobbery about convenience foods (when it’s based in status and not health concerns) is for the birds (but not the Willow Birds, of course).

  32. Wow, you and I must be craving the same things lately! I, too, made a peach and blueberry tart around the same time. Your looks magnificent! I layered my peaches the same way, but the crust overlapped and covered up all my handy work… Oh well, there’s always next time!
